- 1 Tbls fresh lemon juice
- 2 anchovy filets ... (ewww - never used them, but if you have a thing for anchovies go for it)
- 1 garlic clove, minced
- 1/2 tsp Dijion mustard
- 1/4 cup extra-virgin olive oil
- 1 Tbls freshly grated Parm. cheese
mix it up and pour over a head of chopped Romaine Lettuce - you can throw grilled chicken on top or grilled shrimp, we've had it both ways. And if you're lucky enough to be familiar with Silverado - then you may remember they used to serve their Caesar salads with a side of rice and pico de galo. We use brown rice and make ghetto pico (just chopped up tomatoes & onion with a little olive oil drizzled over top).
Really is delish & easy to make. Buy the block of fresh parmesan cheese...it definitely makes a difference and it last foooorrever so you can have it for pastas and stuff. Ohh & it's healthy too!
