Black Bean & Mango Salsa

One of my favs! Eleven out of eleven stars. Goes great with grilled chicken and the best part is you can make heaps of it & then eat some everyday! I think it's meant to be somewhat of a garnish but we use it as a side. I'm not putting any quantities cause I don't measure anything with this one...do what looks and taste good

  • Black beans (2 cans or so)
  • Mango (ripe when they aren't uber squishy & not really hard - bright yellow insides)
  • Red Pepper
  • Red Onion
  • Cilantro
  • Juice of lemon
  • Garlic, the fresh stuff
  • ** Red wine vinegar

Dice Mango (peel first), red pepper, red onion, & cilantro. Mince up garlic (I use 3 cloves...but I love garlic). Dump your beans (drain them first) in a bowl and mix in all the diced up stuff. Squeeze lemon juice (I usually use half a lemon). Tumble it all around - Donzo! I think it tastes really, really good when it's had a little bit of time in the fridge to let all the flavors intermingle & chill out. If when all is said and done it appears dry or you want a little more flavor add a dash of red wine vinegar!

I make a similar recipe, only omit mango, add diced roma tomato, diced jalapeno pepper(seeded, or not depending on your idea of hot), 1 or 2 cans of sweet corn, or if you are lucky use 2 or 3 ears of fresh cooked corn off the cob. I also give it a good dash of sea salt! yum yum! And I use it as a side dish or just to scoop tortilla chips.
