Pho - Vietnamese Soup

Ten out of eleven stars for this one! We did it :)

Broth
  • 3.5 Liters beef (or Pho) stock ...we used beef stock
  • 1 large onion, sliced
  • 6 slices of fresh root ginger
  • 1 stalk lemon grass
  • 1 tsp black peppercorns
Insides
  • 1 1/4 lb sirloin, very thinly sliced
  • rice noodles
Toppings (being that these are toppings they are all optional. A star indicates our favs)
  • Bean Sprouts **
  • Fresh basil
  • Fresh mint
  • Fresh corinander, chopped **
  • Fresh jalepenos, sliced **
  • limes **
  • Hoisin Sauce **
  • Hot Sauce**
In a large stock pot: stock, onion, ginger, lemon grass, & peppercorns. Boil and simmer for 1 hour. Soak noodles in hot water for 15 mins/until soft. Drain. Bean sprouts, mint, basil, coriander, jalepenos & limes on the side. Place noodles in bowls, place thinly sliced sirloin pieces on top the noodles & laddle the broth in. (the hot broth will cook the thin sliced meat). EAT!! Squeeze a quarter of lime in, pile on the bean sprouts and add the rest of the ingredients as desired. YUMS!
