- Flank Steak (or any kind of steak you would like - I got 3 small sirloin steaks for the two of us)
- Extra virgin olive oil
- 1/4 cup fresh lime juice (I just juiced two limes)
- 1 TBsp Asian fish sauce (find it in the Asian food aisle)
- 1/4 chili paste
- 1 tsp of sugar substitue (I didn't include this...one tsp whats the point??)
- 1 cup chopped fresh cilantro (I used more - love that stuff)
- 1/2 thinly sliced scallions
- 1 pound green beans trimmed
heat grill or grill pan to high. Rub steaks on both sides with olive oil & season with salt & pepper. Grill to desired doneness (about 4mins per side for medium rare). Remove from heat. Whisk together lime juice, fish sauce, chili paste, sugar, cilantro and scallions in a large mixing bowl. Heat sauce pan of salted water until boiling. Add beans and cook under crisp-tender (about 3mins). Drain. Thinly slice meat across the grain. Toss with lime juice mixture, add beans, toss & serve.
