Bean & Steak Burritos

Off the charts this is :) We kinda made it up as we went so it's definitely a flexible recipe
  • Sirloin Steak, fat trimmed & diced or sliced (we used one big one for the both of us)
  • Refried beans
  • Mexican Rice (we used Uncle Bens 2 min microwavable mexican rice)
  • Large tortillas
  • Lettuce, chopped
  • Tomato, diced
  • Cheese, shredded
  • Cilantro, chopped
  • Avocado, peeled, pitted & sliced
  • Limes
  • Salsa
  • Jalepenos
  • Sour Cream
  • Hot Sauce

Prepare your toppings. Season steak (we used cumin, cayenne, salt & pepper - but just salt & pepper would be good too). In a skillet pan fry steak until done ...doesn't take long at all. Thats it! Then assemble (below is how I created my burrito)

bottom to top
tortilla
thin layer of beans ...ok thick layer ;)
sprinkle of cheese
spoonful of diced steak
spoonful of mexican rice
sprinkle of cilantro
sprinkle of lettuce
couple jalepeno slices
few avocado slices
tomato
squeeze of lime juice

fold sides of tortilla in and roll like a burrito. Place rolled burito in skillet on medium heat to seal it up. Turn over so both top and bottom get some heat.

I sprinkled more cheese on top of the burrito & finished topping with salsa, sour cream & hot sauce. Knife, fork, napkin & a few tortilla chips to scoop up everything that falls out and ....OMG!

Nice thing is everything is optional...but I think the cilantro and lime juice really make the burrito yummy. And I'm sure you could use chicken instead of steak.
