Ultimate Lasagna

13 out of 11 stars! Credit given to chef Kevin, this is his creation 100%. I'm the preparer & taster ;)

This makes a lot but whats the point in making just a little bit of lasagna?!

Cheese(s) Mixture
  • 1 ricotta cheese (the big container)
  • 1 lowfat cottage cheese (the big container - or same size as the ricotta)
  • Fresh Parsley
  • Dried Oregano
  • 16 deli slices of mozzarella cheese (about 2 packages)

Sauce
  • 1 pound ground turkey
  • 1 pound spicy italian sausage
  • 2 16oz cans crushed tomatoes
  • 2 12oz cans peeled whole tomatoes
  • 2 small cans tomato paste
  • 1 package sliced mushrooms
  • 1 head broccoli, chopped, no stems
  • 1 bag of spinach
  • 8 cloves garlic, chopped
  • 6 bay leaves (will remove at end)
  • oregano
  • rosemary
  • hot pepper (ie: jalapeno), sliced length wise (will remove at end)

Lasagna noodles (we use whole grain)

Prepare Cheese Mixture
Dump ricotta cheese and cottage cheese in mixing bowl, chop parsley and stir in both parsley & oregano into cheese mixture. Keep cool, put aside.

Prepare Sauce
Brown ground turkey and sausage. Drain. Put all the rest of the sauce ingredients into big pot (seasonings ie: oregano, rosemary etc... are to taste). Stir in meat. Let simmer on low heat for a minimum 3 hrs. Before layering remember to remove all bay leaves and hot peppers!!

Prepare Noodles
Boil :)

Prepare Lasagna
Sauce
Noodle
Ricotta Cheese Mix
Mozzarella Slices
Repeat until it fills the casserole dish! (Leave room at the top - it will rise a little when cooking)

Cook Lasagna
Uncovered in oven for 45mins at about 300. Let stand for at least 15mins (the longer it stands the prettier it will cut). Slice up & serve. yum yum.
