Stuffed Green Peppers

  • 4-6 Green Peppers
  • 1 lb ground turkey or beef (we used ground turkey)
  • half chopped red onion
  • 1 (14.5oz) can diced tomatoes
  • 1/2 cup uncooked rice (we used brown rice)
  • 1/2 cup water
  • 1 cup shredded chedder cheese (we used only maybe 1/4 cup)
  • 1-2 cans condensed tomato soup

Preheat oven to 350.
Boil large pot of salted water and then add peppers for 5mins - remove & set aside. Brown ground turkey with onion. Drain. Add in tomatoes, uncooked rice, and water - Cover & simmer for 15mins or until rice is tender. Remove from heat and stir in cheese. Stuff the peppers and place in casserole dish, open, stuffed end up. Mix condensed tomato soup with just enough water to make a gravy consistency & pour over peppers. Bake for 25-35 mins.

Peppers are kinda meal in itself but I made some mashed taters to serve with them :)
