Christmas Quiche

Following for 1 9inch pie crust
  • 1 9" pie crust
  • 6-12 slices cooked bacon, however bacony you desire (we used about 6slices)
  • 1/2 cup shredding swiss cheese
  • 1/3 cup minced onion
  • 4 eggs beaten
  • 1 cup light cream
  • 3/4 tsp. salt
  • 1/4 cup sugar
  • 1/8 tsp. cayenne pepper
  • handful of spinach

Preheat oven 425. Fry, drain, dry and chop bacon. Sprinkle bacon, cheese, spinach and onion into pastry crust. In separate bowl whisk together eggs, cream, salt, sugar and cayenne pepper. Pour mixture into pastry shell. Bake 15mins in preheated oven. Reduce heat to 300 degrees and bake additional 30mins or until knife inserted one inch from edge comes out clean. Allow quiche to sit 10mins before cutting into it.
