- 12 grahm crackers, finely ground ( 1 1/2cups)
- 3/4 cups, plus 3tbls sugar
- 4 tbls melted butter
- 1 lb cream cheese, room temperature
- 2 large eggs
- 1 large egg yolk
- 3/4 cup eggnog
- 1 tbls. plus 1 1/2 tsp. flour
- 1 tbls. plus 1 tsp. brandy (I used Captain Morgans rum & I used a little more than called for )
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- nutmeg for dusting after cooked
Preheat oven 350. Coat 9inch square baking pan with cooking spray. Stir together grahm crackers, 3tbls. sugar & melted butter. Press into bottom of pan. Bake until crust is just brown around edges, 12-15mins. Let cool.
Beat cream cheese with a mixer until fluffy. Add the remaining 3/4 cup sugar, eggs, egg yolk, flour, brandy, vanilla, salt. Beat until smooth. Pour filling over crust. Set pan inside roasting pan & fill the roasting pan with just enough hot water to come up halfway up the sides of the baking pan. Bake until just set, 40-45mins. Remove baking pan from roasting pan and let cool, 30mins. Refridgerate for 3hrs or overnight.
Dust top with nutmeg - and serve :)
